Browned Butter Chocolate Chunk Zucchini Bread

  • 1 ⅓ cup All Purpose Flour
  • 1 tsp. Baking Powder
  • 1 tsp. Ground Cinnamon
  • ½ tsp. Baking Soda
  • ½ tsp. Fine Sea Salt
  • ¼ cup Butter
  • ¼ cup Olive Oil or replace with more butter
  • cup Brown Sugar
  • cup Granulated Cane Sugar
  • 2 large Eggs beaten
  • ¼ cup Applesauce
  • 1 tsp. Vanilla Extract
  • 1 ½ cups Shredded Zucchini
  • 1 cup Chopped Chocolate


  • Preheat oven to 350F. Lightly grease with butter and line with parchment paper a loaf pan.
  • In a small saucepan over medium high heat, add the butter. Once melted, stir occasionally until the butter has browned, about 1-2 minutes. Remove from the heat.
  • In a large bowl, combine the flour, baking powder, cinnamon, baking soda, and salt. Mix well.
  • Add the brown sugar, granulated cane sugar, olive oil, browned butter, beaten eggs, applesauce, and vanilla into the center of the flour mixture. Stir just until combined. It’s okay to have a few flour spots.
  • Add the shredded zucchini and chopped chocolate. Stir just until combined.
  • Transfer the batter to the loaf pan.
  • Bake 55-70 minutes, rotating the pan halfway through, until a toothpick inserted into the center comes out with moist crumbs. Let cool at least 10 minutes before slicing.
