Fig, Arugula, & Caramelized Onion Burger

Ingredients
  

For the Garlic Herb Aioli:

  • 1/2 cup Mayonnaise
  • 2 tbsp. Fresh Basil chopped
  • 2 tbsp. Fresh Parsley chopped
  • 2 Garlic Cloves minced
  • Salt & Black Pepper to taste

For the Caramelized Onions:

  • 2 medium Sweet Onion thinly sliced
  • 4 tbsp. Olive Oil or unsalted butter
  • 1/4 tsp. Salt
  • For the Burgers:
  • 4 Vita Ice Peach Mango Sparkling Water
  • 1 lb. Lean Ground Beef
  • 1 tsp. Salt
  • 1 tbsp. Olive Oil
  • 4 slices Provolone or Mozzarella Cheese
  • 4 Brioche Burger Buns
  • 1 1/2 cups Arugula
  • 6-8 tbsp. Fig Preserves

Instructions
 

For the Garlic Herb Aioli:

  • Whisk all the ingredients until well-combined. Set aside and store in the fridge.

For the Caramelized Onions:

  • Thinly slice the onions.
  • Heat the olive oil in a large skillet over medium low heat. Once heated, add the onions and salt. Stir to combine.
  • Cook, stirring often, for 20-30 minutes, or until the onions caramelize.

To Assemble the Burgers:

  • Divide the beef into 4 equal parts.
  • Heat a large cast iron skillet or grill griddle over medium high heat for 5-10 minutes.
  • Brush the brioche buns with olive oil or melted butter and toast for 1-2 minutes. Set aside.
  • Brush the burger patties with the olive oil and place on the hot griddle. If needed, smash it down to 1/2″ thickness with a burger press or spatula. Season the patties with salt and black pepper immediately. Cook for 2-3 minutes on each side, or until desired.
  • Add a slice of cheese on each patty and cook an additional 30-60 seconds. Remove from heat.
  • Spread the aioli on the buns, add the burgers, top with arugula and fig preserves, along with the caramelized onions. Add the bun tops and serve immediately. Enjoy with Vita Ice Peach Mango Sparkling Water for a refreshing drink!
