Cook and drain the pasta. Toss in one tablespoon of olive oil. Set aside.
Heat up the olive oil in a large skillet over medium high heat for 1 minute.
Remove the sausage links from their casing. Slice into bite-sized pieces. Add into the hot skillet. Brown 1-2 minutes on each side, until fully cooked. Remove from skillet and set aside.
In the same skillet, add the sage and thyme leaves. Saute for 1 minute.
Add the pumpkin puree, heavy cream, whole milk, and broth. Stir until well-combined. Season with salt and black pepper to taste.
Bring to a boil then simmer for 5 minutes, until the sauce has thickened slightly.
Add the pasta and sausage, stir to combine, and simmer for another 3-5 minutes to make sure the pasta is well coated in the sauce.
Serve warm with freshly grated parmesan.
