Easy Chicken Fajita Burrito Bowls

  • 2 tbsp. Olive Oil
  • 1 ½ lbs. Boneless Chicken Thighs skinless, thinly sliced
  • 2 tbsp. Smoked Paprika
  • 1 tbsp. EACH: Chili Powder + Ground Cumin
  • ½ tsp. EACH: Salt + Black Pepper
  • 3 Bell Peppers thinly sliced
  • ½ Yellow Onion thinly sliced
  • 3 Garlic Cloves minced
  • 1 cup Corn Kernels Optional
  • 3 ½ cups Cooked Basmati Rice
  • 4-8 Tortillas charred and warmed
  • 2 cups Lettuce shredded or chopped
  • cup Cotija Cheese
  • Lime Wedges for serving
  • Guacamole for serving


  • In a large skillet over medium high heat, add the olive oil to warm up for 1-2 minutes.
  • In the meantime, combine the sliced chicken, bell peppers, onion, garlic,(optional) corn kernels, and seasoning together. Mix until well coated in the seasonings.
  • Add the hot skillet to sauté for 10-12 minutes, until chicken is fully cooked and vegetables are tender.
  • Serve warm over rice and/or shredded lettuce. You can also serve with warmed tortillas, lime wedges, and guacamole on the side. Garnish with fresh cilantro and cotija cheese.
