
Easy Chicken Fajita Burrito Bowls
Ingredients
- Vita Ice Lemon Lime for serving
- 2 tbsp. Olive Oil
- 1 ½ lbs. Boneless Chicken Thighs skinless, thinly sliced
- 2 tbsp. Smoked Paprika
- 1 tbsp. EACH: Chili Powder + Ground Cumin
- ½ tsp. EACH: Salt + Black Pepper
- 3 Bell Peppers thinly sliced
- ½ Yellow Onion thinly sliced
- 3 Garlic Cloves minced
- 1 cup Corn Kernels Optional
- 3 ½ cups Cooked Basmati Rice
- 4-8 Tortillas charred and warmed
- 2 cups Lettuce shredded or chopped
- ⅓ cup Cotija Cheese
- Lime Wedges for serving
- Guacamole for serving
Instructions
- In a large skillet over medium high heat, add the olive oil to warm up for 1-2 minutes.
- In the meantime, combine the sliced chicken, bell peppers, onion, garlic,(optional) corn kernels, and seasoning together. Mix until well coated in the seasonings.
- Add the hot skillet to sauté for 10-12 minutes, until chicken is fully cooked and vegetables are tender.
- Serve warm over rice and/or shredded lettuce. You can also serve with warmed tortillas, lime wedges, and guacamole on the side. Garnish with fresh cilantro and cotija cheese.
