In a large skillet over medium high heat, add the olive oil to warm up for 1-2 minutes.
In the meantime, combine the sliced chicken, bell peppers, onion, garlic,(optional) corn kernels, and seasoning together. Mix until well coated in the seasonings.
Add the hot skillet to sauté for 10-12 minutes, until chicken is fully cooked and vegetables are tender.
Serve warm over rice and/or shredded lettuce. You can also serve with warmed tortillas, lime wedges, and guacamole on the side. Garnish with fresh cilantro and cotija cheese.
