Preheat oven to 425F.
In a large bowl, toss all the peach cobbler ingredients together until combined. Add to a medium-sized baking dish.
Bake for 20 minutes, or until the peaches are almost tender.
In the meantime, make the biscuits. In a large bowl, mix the flour, sugar, and baking powder. Add the cubed butter and use your hands to mix until crumb-like texture. Stir in the buttermilk just until combined.
Roll out the dough on a clean surface to 1” thick. Cut into 2” diameter circles.
Add the mini biscuits on top of the baked peach cobbler. Brush with butter or olive oil, and (optional) sprinkle with additional sugar.
Bake 15-20 more minutes, until the biscuits are golden brown and peaches are tender.
Let cool 10 minutes before serving with vanilla bean ice cream.
