Easy Peach Cobbler with Mini Buttermilk Biscuits

For Serving

  • Vita Ice Peach Mango
  • Vanilla Bean Ice Cream

For the Buttermilk Biscuits:

  • 2 ½ cups Flour
  • ¼ cup Granulated Cane Sugar
  • 1 tsp. Baking Powder
  • 1 tsp. Ground Cinnamon
  • 8 tbsp. Cold Butter cubed
  • 1 cup Buttermilk

For the Peach Cobbler

  • 8 large Yellow Peaches pitted and sliced
  • ¼ cup Granulated Cane Sugar
  • ¼ cup Brown Sugar
  • ½ tsp. Ground Cinnamon
  • ¼ tsp. Ground Nutmeg
  • ¼ cup Lemon Juice

Instructions
 

  • Preheat oven to 425F.
  • In a large bowl, toss all the peach cobbler ingredients together until combined. Add to a medium-sized baking dish.
  • Bake for 20 minutes, or until the peaches are almost tender.
  •  In the meantime, make the biscuits. In a large bowl, mix the flour, sugar, and baking powder. Add the cubed butter and use your hands to mix until crumb-like texture. Stir in the buttermilk just until combined.
  • Roll out the dough on a clean surface to 1” thick. Cut into 2” diameter circles.
  • Add the mini biscuits on top of the baked peach cobbler. Brush with butter or olive oil, and (optional) sprinkle with additional sugar.
  • Bake 15-20 more minutes, until the biscuits are golden brown and peaches are tender.
  • Let cool 10 minutes before serving with vanilla bean ice cream.
