In the bowl of a stand mixer, whisk the warm water, yeast, and sugar together. Set aside for 8-10 minutes to activate the yeast.
Add the salt and 3 cups flour. Using the dough hook, mix on LOW for 2 minutes. Increase speed to Medium-High, knead for 4-5 minutes, adding ¼ cup flour as needed until a smooth and pliable dough.
Cover the bowl with plastic wrap. Set aside in a warm environment for 1-2 hours, until doubled in size.
Punch down the dough. Transfer to a clean surface to divide into 8 equal pieces.
Roll each piece into a tight ball. Press your thumb into the center of each to create a 1.5” – 2” hole. Loosely cover with a tea towel to rest 10 minutes.
Preheat oven to 425F. Line a large baking pan with parchment paper.
Combine the water and honey in a large pot. Bring to a boil.
Boil the bagels for 1 minute on each side. Place the bagels on the prepared pan.
Brush with an egg wash and add favorite toppings.
Bake for 20-25 minutes, rotating pan halfway through, until golden brown. Let cool at least 20 minutes before slicing.
To make the cream cheese, simply fold all ingredients together until well-combined. Serve with the bagels.
