Slice the chicken breasts in half lengthwise, then pound out to ¼” thick in a resealable bag or between parchment paper.
In a small bowl, mix all the chicken seasonings together. Season both sides of the pounded chicken pieces. Set aside.
In a skillet over medium high heat, add the cobs of corn to cook 30 seconds to 1 minute on all sides. Remove and let cool.
Add the olive oil for the chicken. After 30 seconds, add the chicken to sear 4-5 minutes untouched on both sides.
In the meantime, toss together all ingredients for the spicy peach salsa.
Remove the chicken to a separate plate. Add the Dijon mustard and honey to the skillet. Whisk until smooth and a glaze forms, about 1 minute.
Add the chicken back into the skillet to finish cooking. Use tongs to make sure the chicken is coated in the honey-dijon glaze.
