Mini Sundried Tomato & Arugula Beef Sliders

Ingredients
  

  • Vita Ice Strawberry Watermelon for serving
  • 6 Slider Buns
  • 2 tbsp. Olive Oil
  • 1 lb. Ground Beef
  • 1 large Shallot finely chopped
  • 2 cloves Garlic minced
  • 2 tbsp. Freshly Chopped Herbs such as basil, oregano, and dill
  • ½ tsp. each Salt & Black Pepper
  • ½ cup Light Mayonnaise
  • cup Sundried Tomatoes finely chopped
  • 1 tbsp. Olive Oil or Oil from the Sundried Tomatoes Jar
  • ½ cup Pickles
  • 1 cup Baby Arugula

Instructions
 

To Make the Patties

  • In a large bowl, combine the ground beef, finely chopped shallots, minced garlic, herbs, salt, and black pepper. Mix just until combined, then form into 6 equal-sized patties.
  • Add 1 tablespoon olive oil to a large skillet over medium high heat. Once heated up for 1-2 minutes, add the patties to cook for 3-4 minutes on each side, until desired doneness.

To Prepare the Slider Buns

  • Drizzle the remaining 1 tablespoon olive oil over the insides of the slider buns, then toast on a heated griddle for 1-2 minutes or BROIL in the oven for 1-2 minutes.

To Make the Sundried Tomato Mayo

  • Combine the mayonnaise, finely chopped sundried tomatoes, and olive oil or oil from the jar in a small bowl. Mix to combine. Adjust to taste with salt and black pepper.

To Assemble the Burgers:

  • Add a generous slather of the sundried tomato mayo to the bottoms of the slider buns. Add 2-3 pickles followed by a patty and a handful of baby arugula. Press it all down with the top slider bun.
