Stone Fruit Ricotta Pancakes

  • 1 1/2 cups All Purpose Flour
  • 2 tbsp. Granulated Cane Sugar
  • 2 1/2 tsp. Baking Powder
  • 1/4 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 1 cup Milk
  • 3/4 cup Ricotta
  • Juice of 1 Lemon
  • 2 Plums or other seasonal stone fruit
  • Vita Ice Bing Cherry Plum for serving


  • Thinly slice the stone fruit. Set aside.
  • Heat up a griddle or large nonstick skillet over medium heat. Lightly grease with olive oil or butter.
  • In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt together.
  • Create a well in the center of the flour mixture. Add the milk, ricotta, and lemon juice. Starting the center and working your way out, whisk until smooth, about 1 minute.
  • Using 1/3 cup batter per pancake, add the batter to the heated griddle.
  • Add 2-3 thin slice of stone fruit to each pancake. Once the air bubbles begin to appear, about 1-2 minutes, flip and cook an additional 1-2 minutes, until golden brown on both sides.
  • Enjoy warm with fresh fruit, maple syrup, and Vita Ice Bing Cherry Plum for a refreshing drink!
