Thinly slice the stone fruit. Set aside.
Heat up a griddle or large nonstick skillet over medium heat. Lightly grease with olive oil or butter.
In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt together.
Create a well in the center of the flour mixture. Add the milk, ricotta, and lemon juice. Starting the center and working your way out, whisk until smooth, about 1 minute.
Using 1/3 cup batter per pancake, add the batter to the heated griddle.
Add 2-3 thin slice of stone fruit to each pancake. Once the air bubbles begin to appear, about 1-2 minutes, flip and cook an additional 1-2 minutes, until golden brown on both sides.
