Preheat oven to 325F. Generously butter a 9” springform pan.
In a food processor, combine the chocolate cookie sandwiches and melted butter. Pulse until fine sand-like texture. Press into the prepared pan. Bake the crust for 10 minutes.
In the meantime, combine the cream cheese, yogurt, milk, melted chocolate, eggs, sugar, flour, espresso powder, and vanilla together in a food processor or blender. Pulse until smooth and creamy.
Transfer the cheesecake batter into pan with the crust. Bake on the middle rack for30-35 minutes, until the center is a little jiggly but set.
Turn off the oven but leave the cheesecake inside. Cool in the oven with the door cracked for 1 hour.
Chill in the fridge for 1 hour.
Garnish with a homemade chocolate ganache, chocolate buttercream swirls, and fresh strawberries.
